At Heather Ridge Farm we love to see catering as an opportunity to use our resources to design an unforgettable meal for any occasion. Farmer Carol Clement and chef Rob Handel combine their experience and connections in local agriculture and varied cuisines to source the best possible ingredients and prepare them in tasteful and elegant ways. From simple barbecues or live-fire roasts to more elaborate plated fare, we’re able to bring a taste of the Catskills to your event in any season.

 

Cocktail Hour

We specialize in offering a range of local cheeses and farm made charcuterie for your guests to enjoy prior to the start of the meal. Our cheese boards feature cheeses from award winning local cheese makers like Cooperstown Cheese, Nettle Meadow, and Brovetto Dairy. We pair these with fresh local fruit, farm made pickles, relishes, conserves, and roasted vegetables chosen to compliment the cheeses selected. Charcuterie platters feature a range of farm made sausages, smoked meats, pates, rillettes, mustards, and pickles, all prepared with our grassfed meats and pastured poultry.  Also available for your cocktail hour are various canapés, small bites, and farm baked breads.

 

Dinner

For most events the large meal is the centerpiece of the occasion. We take the responsibility for making it special seriously, and relish using this time to show off products from our farm and other local farms and dairies. Set the stage for an outdoors Catskills affair with a live-fire meal, cooked over apple wood and foraged grapevine and served family style or buffet while the smell of wood smoke lingers in the air. For more formal occasions we offer plated dishes designed to showcase the best that season has to offer. Some prior menus are shown below, but each event is treated as a unique occasion.

 

Spring Barbecue Style Dinner

Lemon and Herb Marinated Chicken
Our pastured chicken marinated with lemon and herbs and cooked over wild grapevine. Served with chimichurri and ramp chutney

Lamb Kabobs
Our grassfed lamb cooked over charcoal and wild grapevine and served with chimichurri and ramp chutney

Farmhouse Salad
Massaged kale, seasonal vegetables, and yogurt and pink peppercorn dressing

Roasted Beets and Chard

Wild Rice Salad
Wild and jasmine rices with pea shoots, spring onions, and radish

 

Early Fall Pork Roast

Pork Roast
Our pastured, heritage breed pork slow roasted over applewood and served with apple chutney and maple mustard sauce

Fall Salad
Local greens and fall vegetables with farm made honey mustard vinaigrette and Italian style vinaigrette dressings

Cornbread Salad
Skillet cornbread with grilled Barber’s Farm corn, cherry tomatoes, and roasted fennel

Wild Rice Pilaf

Wild and jasmine rices with almonds and herbs

Potato Rolls
Farm baked potato rolls with local butter and wild herb dipping oil

 

Plated Summer Meal

Chicken Provencal
Our pastured chicken slow cooked with herbs de provence, white wine, prunes, and olives. Served with ratatouille and rice and wild herb salad

Beef Roulades
Our grassfed beef stuffed with fennel, heirloom tomato, and Toma Celena cheese. Served with basil chimichurri along with ratatouille and rice and wild herb salad

Barbers Farm summer vegetables slow cooked with fresh herbs and white wine. Served with rice and wild herb salad

Dessert
While we do not offer wedding cakes we are glad to offer simple desserts to accompany or replace the traditional wedding cake. Poached or caramelized seasonal fruit with farm cultured crème fraiche, Italian style panna cotta, and biscotti and assorted cookies are among the items we offer to enhance your dessert course. We’re also proud to offer freshly roasted organic fair trade coffee and herbal teas to round out the end of your meal.

Root Beer Float Bar
Our farm made root beer and honey-vanilla ice cream are crowd favorites. Let us bring them on the road to your event! Crafted in small batches, our root beer is made with fifteen different raw roots, herbs, barks, and spices, and sweetened with pure cane sugar without any artificial flavors, colors, or preservatives. Our honey-vanilla ice cream serves as an example of how delicious simple quality ingredients are. Local milk and honey, cream, vanilla, and a pinch of salt is all that’s needed to make a wonderful accompaniment to our draft root beer. Our root beer bar is offered by the hour during dessert or cocktail hour.
